I can see how to record a call, and how to listen to it in the CDR Reports section. However I cannot see how to delete the recorded call. Is this possible through the graphical interface, or do I need to use a terminal command?
By now, you must to use the CLI console to delete CDR registers and recordings, However the feature to delete recordings from the GUI could be included in future versions

I can see that my recordings are stored in a date hierarchy under /var/spool/asterisk/monitor/
So I will write a bash script that will delete older recordings.
Yes, it is the Linux CLI. You should check the sonata recordings app, this app has the option to delete old recordings and another options
